Hawaiian Pulled Pork with Pineapple Mango Slaw
INGREDIENTS
2 – 2 ½ lbs. pork loin or pork shoulder (more if serving a big crowd)
1 ½ cups pineapple juice
½ cup homemade BBQ sauce (see recipe on my website)
1/3 cup coconut aminos or soy sauce*
¼ cup apple cider vinegar*
2 cloves of garlic, minced*
½ tsp ground ginger*
Corn or flour tortillas*
2 cups shredded purple cabbage
1 cup diced fresh pineapple
1 cup diced fresh mango
¼ cup diced red onion*
2 tbsp cilantro
Juice of one lime*
Drizzle of good olive oil*
Salt and pepper to taste*
DIRECTIONS
Place pork loin or shoulder in the slow cooker. Mix the ingredients for the sauce (all the ingredients prior to the tortillas) in a large bowl and pour over the meat. Set the slow cooker on low for 7-8 hours. In a large bowl, combine all the ingredients below the tortillas. Cover and refrigerate until ready to serve. When the pork is finished, shred the meat with two forks.
Place the shredded meat on a tortilla and top with the slaw, and hot sauce and avocado, if desired. Enjoy!

Kid Version
My kids love the pork and enjoy it in taco form. However, if you have a pickier eater, simply make a quesadilla, and serve it with pineapple, mango, and a veggie (avocado, cucumber, or red bell pepper) on the side. You can even try putting a little bit of the pulled pork inside the quesadilla, to help introduce the flavor profile to your kids!
