Purple Cabbage Slaw

INGREDIENTS

  • 1 small head purple cabbage

  • 2 large carrots, shredded

  • ¼ cup sliced almonds

  • ¼ cup raw pumpkin seeds

  • ¼ cup roasted sunflower seeds

  • ¼ cup dried cranberries*

  • 2 tsp. sesame seeds

  • 3 tbsp. olive oil*

  • 2 tbsp. apple cider vinegar*

  • 1 ½ tbsp. pure maple syrup*

  • ½ lemon*, juiced

  • 1 clove garlic*, finely minced

  • ½ tsp. kosher salt*

  • ¼ tsp. freshly ground black pepper*

 
 

DIRECTIONS

Slice the cabbage in half and remove the core. Finely shred the cabbage with a sharp knife and place in a large bowl. Shred the carrots into the same bowl and add the next 5 ingredients. For the dressing, add the next 7 ingredients to a small mason jar and, with the lid on, shake vigorously for 30 seconds. Pour the dressing on the cabbage mixture. Depending on the size of your cabbage, use just enough dressing to moisten everything. You can always add more dressing later, but you can’t take it out. Enjoy!
