No Mayo Coleslaw

INGREDIENTS

  • 1 head green cabbage

  • 1 large red apple julienned or thin sliced

  • ¼ - ½ red onion thinly sliced

  • 3 tbsp. coarsely chopped mint

  • 2 tbsp. lemon juice*

  • 2 tbsp. olive oil*

  • 2 tsp. apple cider vinegar*

  • 1-2 tsp. white wine vinegar*

  • Salt* and freshly ground black pepper* to taste

 
 

DIRECTIONS

Slice the cabbage in half, remove the core, and finely shred the cabbage using a mandoline. If you don’t have one, use a sharp knife and shred as thin as you can. The thinner the cabbage, the better! Combine all the other ingredients in a large bowl and mix together. Taste the coleslaw as you go to see if it needs any more acidity, moisture, or salt! Enjoy!
