Lemon-Thyme Chicken Burgers

INGREDIENTS

• Zest and juice of 1 lemon* (Tip – zest the lemon before you juice it)

• 1 ½ lbs. ground chicken

• 2 tsp. chopped, fresh thyme leaves

• Kosher salt*

• Freshly ground black pepper*

• 2 cups fresh arugula

• 4 brioche buns (add more buns for a larger family)

• 2 ½ oz. Boursin cheese

DIRECTIONS

Combine ground chicken with lemon zest, thyme, 1 tsp. salt and a few grinds of black pepper.  Form into 4-inch patties and grill over med-high heat until temperature reaches 165 degrees, 15 and 18 minutes, turning halfway through.  Meanwhile, toss 2 cups arugula with 1 tbsp. lemon juice and a pinch of salt.  Grill 4 brioche buns, cut side down, for 1 minute.  Divide arugula evenly among bottom halves and top with burgers.  Divide Boursin cheese evenly among top halves.  Serve the burgers with roasted potatoes or baked sweet potato spears (visit my website for the recipes).  Enjoy!
