Roasted Sweet Potatoes

INGREDIENTS

• 2 large sweet potatoes

• Ground cumin*

• Olive oil*

• Kosher salt*

• Freshly ground black pepper*

 
 

DIRECTIONS

Preheat oven to 425 degrees. Rinse and scrub the sweet potatoes and dry thoroughly. Chop off the ends of the sweet potatoes and then chop into chunks. Place the chopped sweet potatoes on a rimmed baking sheet. Drizzle the sweet potatoes with olive oil and sprinkle with cumin, salt, and pepper. Toss to combine and then arrange in a single layer. Roast the sweet potatoes for 20 minutes, flip, and continue roasting for another 10-20 minutes, until fork tender. Enjoy!
