Ground Pork Lettuce Wraps

INGREDIENTS

  • 1 tbsp. olive oil*

  • 1 lb. ground pork (use ground chicken, if preferred)

  • 2 cloves garlic*, minced

  • 1 onion*, diced

  • ¼ cup hoisin sauce

  • 2 tbsp. soy sauce*

  • 1 tbsp. rice wine vinegar*

  • 1 tbsp. freshly grated ginger*

  • 1 (8 oz.) can whole water chestnuts, drained and diced

  • 2 green onions thinly sliced

  • Shredded carrot

  • Kosher salt* and freshly ground black pepper*

  • 1 head butter lettuce

  • Optional – Sriracha sauce

  • Optional – serve with a side of cooked brown or jasmine rice

 
 

DIRECTIONS

Heat olive oil in a saucepan over medium-high heat. Add ground pork and cook until browned, about 3-5 minutes, making sure to crumble the meat as it cooks. Drain off any excess fat. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar and ginger until onions have become translucent, about 1-2 minutes. Stir in chestnuts, green onions, and shredded carrot until tender, about 1-2 minutes: season with salt and pepper, to taste. To serve, spoon several tablespoons of the pork mixture into a lettuce leaf. Drizzle with more hoisin sauce and Sriracha sauce, if desired. Enjoy!

Kid Version

I reserve some of the ground pork (or chicken) mixture, just after the browning step, for my kids. I add a side of rice and veggies (carrots, cucumbers, edamame, avocado) to go with the pork. Sometimes my older daughter is game to try the pork mixture, once all the ingredients are added, wrapped in a lettuce leaf. I like the idea of having kids try something before they decide they don’t like it….you never know what their taste buds might be attracted to!
