Polenta with Marinara Sauce and Veggies

INGREDIENTS

  • Olive oil*

  • 1 (or 2 if serving to the kids as well) roll of polenta (they have this item at Trader Joes) *

  • Salt*

  • Pepper*

  • ½ yellow onion, chopped*

  • 1 green bell pepper, chopped*

  • 1 jar good marinara sauce (if you’d like to make homemade sauce, let me know and I’ll send you a great, easy recipe) *

  • 2 cups fresh spinach*

  • 1 package sundried tomatoes*

  • Grated parmesan cheese (optional)*

DIRECTIONS

Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Let the oil get hot before adding the polenta. Slice the polenta, place (carefully) into the skillet and sprinkle with salt and pepper. Cook the polenta until crisp and then flip (carefully) and cook the other side until crisp. Transfer the polenta to a plate lined with paper towel. Heat a drizzle of olive oil in a skillet over medium heat. Add the onion and green bell pepper to the hot skillet. Sauté until the veggies soften, 3-5 minutes. Add the marinara sauce. Warm the marinara sauce for a minute or two and then add the spinach. Stir in the spinach until it wilts. Add the sundried tomatoes. Place 7-8 slices of polenta in a shallow bowl and top with the sauce. Sprinkle with parmesan cheese, if desired, and a crack of fresh ground black pepper. Enjoy!

KID VERSION

My kids really enjoy this meal. If your kids aren’t into polenta, boil some pasta (whatever shape/type they enjoy) and serve with the sauce. If you have really picky eaters, serve them pasta with plain marinara sauce and extra sliced, raw green bell peppers on the side.
