Green Beans / Asparagus

INGREDIENTS

  • 1 bunch of green beans or asparagus

  • Salt and pepper*

  • Olive oil*

  • 1 lemon*, zested

 
 

DIRECTIONS

Blanch the green beans/asparagus by bringing a pot of salted water to a boil. Add the green beans/asparagus and cook for 3 minutes. After 3 minutes, immediately submerge the green beans/asparagus in a bowl of ice water to stop the cooking.

Heat a drizzle of olive oil in a skillet over medium heat. Add the green beans/asparagus and sprinkle with salt, pepper, and lemon zest. Cook for 5 minutes, maintaining the bright green color and crispness. Enjoy!

If you’re short on time, skip the blanch step and just sauté the veggies a bit longer.
