Crispy Pork Chops

INGREDIENTS

• 1 Tbsp. butter*, melted

• 1 egg*

• 2 Tbsp. milk*

• 1 cup dried breadcrumbs*, seasoned with 1 tsp. kosher salt*, 1 tsp. freshly ground black pepper* and 1 Tbsp. Italian seasoning*

• 3 boneless pork loin chops

• Side dish suggestion – Winter Slaw (see Sides and Sauces on my website for the recipe)

 
 

DIRECTIONS

Preheat the oven to 425 degrees. Pour melted butter into a 9x13-inch baking dish. Beat together egg and milk in a shallow bowl. Put the breadcrumbs, plus seasoning, stirring to combine, in another shallow bowl. Sprinkle the chops with salt and pepper, dip in the egg mixture, then dip in breadcrumbs to coat. Transfer chops to the prepared baking dish. Bake 10 minutes. Turn and bake 10 more minutes, until an instant-read thermometer inserted into the thickest parts registers 145 degrees. Let the chops rest on a plate for 5 minutes. Serve over Winter Slaw and garish with a sprinkle of salt and pepper. Enjoy!

Kid Version

Both my girls love these pork chops! My older daughter will eat the Winter Slaw with her chop, but I serve this meal to my younger daughter with a side of chopped, raw veggies. Any veggies you have on hand, that you know your child likes, will do!
